To comply with the requirement on air change or air purifier in catering premises under the Prevention and Control of Disease (Requirements and Directions) (Business and Premises) Regulation (Cap.599F), licensees of general restaurant, light refreshment restaurant, marine restaurant and factory canteen licenses issued by the Food and Environmental Hygiene Department (FEHD) and operators of catering premises not covered by valid food business license issued by FEHD shall, starting from today to April 30, declare through the online platform the information that they have met the requirement of having a minimum of six air changes per hour or installing air purifier meeting the prescribed specifications and according to the on-the-ground situation in their catering premises. However, upgrading the existing ventilation system takes a long time and is an expensive investment, so considering an air purifier could be a more economical solution for you.

What is air change?
Ventilation is to provide fresh air to the room and to remove or dilute pollutants and odors to ensure the air quality of a premise. The higher the number of "air changes" requirement indicate the more frequent dilute indoor pollutants. Air purification equipment is catered to improve the air change requirement which in lieu of a ventilation system.
What are HEPA and UVC?
HEPA (high-efficiency particulate air filtration technology)
High-efficiency filter (High-Efficiency Particulate Air filtration), is a high-efficiency air particulate filter generally referred to as HEPA filter which comply with HEPA standards that are widely adopted as air purification standard among medical equipment, vehicles, airplanes and home use. The standard is set by the U.S. Department of Energy and is mainly used to filter air borne fine dust particles for the particle size of 0.3μm which can achieve a filtration efficiency of DOP 99.97% and above.
There are three common ultraviolet light waves, namely "UVA", "UVB" and "UVC". UVB has a shorter wavelength so ultraviolet light B is easier to penetrate the bacteria and viruses and destroy genetic material but the effectiveness is not as good as UVC. UVC has the shortest wavelength which is between 200-275 nanometers so it is also known as short-wave sterilization ultraviolet. UVC are widely used in hospitals, air-conditioning systems, sterilization chamber, water purification, sewage system, factories, swimming pools, food and beverage processing and packaging factory, beauty and cosmetics factories, breweries and beverage factories, bakery and cold storage rooms can effectively disinfect and sterilize.
